Yesterday was Oreo cookies 100th birthday! I am so glad they were invented and even happier they decided to stuff them with even more filling… gotta love double stuff Oreos. If you didn’t know, Nick and I, we eat A LOT and love love love anything sweet and fatty (don’t worry we have a pretty balanced diet and work out multiple times a week to make up for it).
In honor of Oreo’s birthday, Boston.com featured Boston bloggers best Oreo recipes. We decided we couldn’t neglect the birthday of one of our favorite desserts so we decided to try the Chocolate Chip Oreo Rice Krispy Treats from Katie at The Small Boston Kitchen. We decided to leave out the chocolate chips because we thought the Oreos were enough chocolate for us. Below is the recipe with step-by-step pics:
- 20 Oreo cookies (I used double stuff)
- 5 cups Rice Krispies
- 1/2 stick butter
- 1 teaspoon vanilla extract
- 5 cups mini marshmallows
Grease the sides of a 9×11 cake pan. Set aside. Using a resealable sandwich bag, crush Oreos with back of a spoon (or a meat tenderizer).
In a large bowl, mix Oreo crumbles with Rice Krispies. Set aside.
Pour the mixture into the prepared cake pan and press mixture down into the pan with your hands. Let it sit at room temperature for at least 30 minutes. Remove Treats from pan and cut into desired shape. Store in airtight container at room.

Oreo Rice Krispy Treats
1. Line a 9×11 cake pan with parchment paper or grease the sides with butter. Set aside. Using a resealable sandwich bag, crush Oreos with back of a spoon. In a large bowl, mix Oreo crumbles with Rice Krispies (optional- add chocolate chips). Set aside. 2. In a medium sauce pan, over medium-low heat, melt butter thoroughly and add vanilla extract. Gradually stir in marshmallows. Continuously stir them until they melt and combine with the butter. Working quickly, pour hot marshmallow mixture over Rice Krispies and gently stir to combine. Pour the mixture into the prepared cake pan and press mixture down into the pan with your hands. Let it sit at room temperature for at least 30 minutes. Remove Treats from pan and cut into desired shape. Store in airtight container at room.
